Ingredients

  • 8 large diver or sea scallops
  • 2 pink grapefruit
  • 1 tangerine
  • 2 kiwi
  • 1 radicchio ball
  • fresh lemon juice

Instructions

  1. heat large skillet or frying pan
  2. add a little olive oil
  3. dry scallops with napkin
  4. put in frying pan do not touch for 3 minutes or untill nice browning.
  5. then flip take out of skillet
  6. peel all citrus and cut into segments. try not to get any pith .
  7. cut kiwis add to bowl
  8. slice up radicchio add to bowl
  9.  add coarse sea salt, lemon and olive oil
  10. toss and plate add scallops on top add a pinch of salt and a good finishing olive oil. i suggest Primo from Sicily.
