Ingredients
- 8 large diver or sea scallops
- 2 pink grapefruit
- 1 tangerine
- 2 kiwi
- 1 radicchio ball
- fresh lemon juice
Instructions
- heat large skillet or frying pan
- add a little olive oil
- dry scallops with napkin
- put in frying pan do not touch for 3 minutes or untill nice browning.
- then flip take out of skillet
- peel all citrus and cut into segments. try not to get any pith .
- cut kiwis add to bowl
- slice up radicchio add to bowl
- add coarse sea salt, lemon and olive oil
- toss and plate add scallops on top add a pinch of salt and a good finishing olive oil. i suggest Primo from Sicily.
