Spring Pesto Sauce
Recipe: Spring Pesto Sauce
Summary: Spring Pesto Sauce is a great pesto in the summer, hot or cold I prefer short pasta shapes with this pesto. Add shrimp, olives, lemon zest and what a picnic.

Ingredients
- 2 large bushel of fresh mint.
- ¼ cup of toasted almonds
- ½ fresh squeezed lemon
- 1 handful fresh spinach cleaned.
- 2 cloves of garlic
- ½ cup -1 cup or more extra virgin olive oil.
- ½ cup of grated parmigiana cheese.
- Salt and pepper
Instructions
- put everything in a blender- EXCEPT extra virgin olive oil.
- Start to blend and slowly emulsify into blender until you can see everything becoming a sauce.
- And salt and pepper, good pinch of salt and some fresh grated cheese.
