Ingredients

  • 2 large bushel of fresh mint.
  • ¼ cup of toasted almonds
  • ½ fresh squeezed lemon
  • 1 handful fresh spinach cleaned.
  • 2 cloves of garlic
  • ½ cup -1 cup or more extra virgin olive oil.
  • ½ cup of grated parmigiana cheese.
  • Salt and pepper

Instructions

  1. put everything in a blender- EXCEPT extra virgin olive oil.
  2. Start to blend and slowly emulsify into blender until you can see everything becoming a sauce.
  3. And salt and pepper, good pinch of salt and some fresh grated cheese.
